The Storage

Storage is one of the main topics in our production, our beer goes through several aging processes.

The main fermentation takes place in traditional fermentation vats and ensures the smooth taste of our beer the "Sylter Hopfen".

The subsequent secondary fermentation in the bottle and the storage at different temperature levels during several weeks, makes for a lively and fine pearly taste. At the end of the storage time we turn the bottle upside down so the yeast can settle in the temporarily closed neck.

We are using a special manual vibration method after our champagne yeast has finished its work and the sediments are removed by the “Degorgierverfahren” (disgorging process) from the bottle.

Thus we abandon the conventional filtration methods used in today’s mass produced beer making processes and keep our beer as it is, in the bottle, all natural, mature, and with only the best ingredients.
